Carmen’s Summer Table at Howard’s Creek
Experience the serenity of an open-air dinner celebrating the beauty and flavors of America during this special tribute to our nation. Hosted by Georgia-based gardening and lifestyle expert Carmen Johnston, and set along the scenic banks of Howard’s Creek, this thoughtfully curated evening brings together the tastes, charm and traditions that define a Greenbrier summer. Carmen has also hand-selected a collection of her favorite summer dishes to highlight throughout the evening.
The experience begins with a selection of refined canapés — lobster rolls, pork sliders and classic deviled eggs — before unfolding into a vibrant seasonal menu. Savor refreshing summer gazpacho, grilled Greenbrier peaches, and a signature West Virginia seven-layer salad, each dish designed to showcase the region’s freshest ingredients.
Entrées feature a trio of standout selections, including perfectly prepared lamb chops, corn-crusted trout, and Rainbow Farm chicken finished with a tangy Alabama white sauce. The evening concludes on a sweet note with an assortment of desserts, including mini pies, s’mores cookies, and peaches and cream.
With music, glowing fire pits and a lively bar offering refreshing summer cocktails, each guest will also enjoy a complimentary cocktail, adding to the relaxed elegance of the evening. This unforgettable gathering in the fresh mountain air of a treasured West Virginia property blends exceptional cuisine with a picturesque setting in the shadow of Howard’s Creek Lodge.
