Whether it’s the Derby Days Cocktail with Butternut Squash Soup or USDA Prime Beef Tenderloin with a Kentucky Sour, your taste buds will thank you after a flavorful dinner that promises to leave a lasting impression.

Enjoy your first libation of the evening with the Derby Days. With Woodford Reserve Rye as the base of this cocktail, your tastebuds will pick up hints of clove, black pepper and molasses. Galliano lends star-anise, sweet vanilla and sage notes which pairs beautifully with our house-made ginger and sage syrup. The perfect pairing to your Butternut Squash Soup.

The Greenbrier Peace and Justice barrel picks are a staple here at the Greenbrier. The perfect bourbon to be enjoyed by the seasoned veteran and even the novice. This bourbon is approachable and an easy sipper. The pour you are enjoying is from our 17th barrel pick, since starting this program 5 years ago. The mash bill recipe consists of 72% corn, 18% Rye and 10% Barley and rings in at 90 Proof.

Paired with the Kentucky Sour Cocktail
Heavy with rich dried fruit, hints of oranges, a dusting of cocoa and caramel round out Woodford Reserve Bourbon. It is defined to have a “silky smooth, almost creamy” finish, and that is exactly how this cocktail should taste. Pops of bright citrus, sweet maple syrup and a few dashes of Fee Foam Bitters, which is an egg white substitute, brings this cocktail into harmonious balance, all while delivering a “silky smooth, almost creamy” finish to this cocktail.

A twice barreled bourbon that has uniquely matured in separate charred oak barrels. The second barrel deeply toasted before a light charring which extracts additional soft, sweet oaks notes. We heavily suggest trying a sample first then pouring the rest over your vanilla bean ice cream to see how it complements and simultaneously transforms the vanilla bean ice cream into so much more.
