The Greenbrier’s award-winning culinary team has secured the freshest catches to prepare a feast that will have you checking your shoes for sand. Dr. Loosen Riesling from Mosel region of Germany is known for its lively acidity, vibrant fruit flavors and elegant mineral notes, making it a delicious pairing for the smoky richness of the ahi, refreshing the palate after each bite of fried oyster making it a great match for the fresh cooling sensation of the cucumber relish, while the mineral undertones mirror the sea—like qualities of the Crudo.

Ponga Sauvignon Blanc from New Zealand with its bright, zesty character make it a wonderful pairing for the Spiced Tomato Gazpacho, allowing its herbaceous notes to echo the freshness of the gazpacho while the wine’s minerality cleanses the palate after each spicy spoonful. The wine’s lively acidity pairs exceptionally well with the Meyer lemon vinaigrette, and its herbal nuances play nicely with the garden herbs in the salad.
